Oven guide
When selecting your Mesiano Wood Oven, you need to be aware of these four categories:
- Design: the style of oven and the type of finish you want, tiled or rendered.
- Size: we account for both internal and external sizes. The larger the internal size, the more pizzas you can cook. The larger the external, the more heat and internal size capacity you can obtain.
- Stand: Build your oven into your kitchen/patio bench top, trailer or on our steel powder coated stand, round or square design with bottom removable shelf.
- Heat: wood, gas or both we have multiple levels of heat and safety capabilities we can add on.

DESIGN
We only use the best imported Italian Mosaico "Bisazza" tiles for the exterior finishes, but there are other finishing options available. Let us know what look your after. For more options checkout Bisazza here

HEAT
The gas burners we use are made in Italy, certified, and are available in LPG or Natural gas. The brand - "Avanzini Bruciatori s.r.l", have been designing and installing gas burners in bakeries and pizza ovens for over 50 years. We are proud to offer their products for our ovens. The flame created by Avanzini's special total pre-mixing firing system is well diffused and very bright. P1 Drago

The P1 is an ultra-silent atmospheric burner. The flame created by the special Venturi burner is very bright and replaces the characteristics of wood-fired baking 100%. The flame control knob can be used to vary the amount of heat developed inside the oven, to reach and maintain the temperature required. The Drago P1 can be installed in any environment, even outdoors, as it requires no electrical connection, it does not suffer from humidity and always guarantees maximum safety for the user, as certified by the IMQ tests performed.
P1 PLus Drago

Same qualities as the Drago P1, however, this burner can work with larger internal sizes. Enabling for a cost-effective solution for those wanting a larger oven
P2 Drago

Drago P2 is a two-flame atmospheric burner, a specific version for even large professional ovens. The flame control is elementary and foolproof, and can easily be adapted to any oven on the market. Moreover the Drago P2 requires no routine maintenance, it does not get dirty and the combustion heads are made in thermal steel, just like all DRAGO burners. The Drago P2 is the most simple and reliable of its kind on the market today.
D2 Drago

Drago D2 has two torches and operates in either low or high flame. The regulation of combustive air is independent on each torch to ensure full brightness, thus simplifying the oven management to the full and offering considerable fuel savings. Drago D2 is equipped with safety devices that are certified worldwide: it has two gas controls with automatic shut-off valves and an ionization-based digital burner control device. This guarantees the best safety standards currently available on the market. The control panel is the NEW Drago Control, a highly evolved control panel designed to manage temperatures in relation to the technical specifications of wood-fired ovens. Simple and intuitive to use, not only does it prevent pizzas from being burned, but also guarantees consistent cooking throughout the working day and considerable fuel savings. The actual temperature inside the oven can be checked on the red display at any time, while the green display is used to check, and modify if needed, the desired cooking temperature in an extremely easy manner.
